Banana loaf

  • 125g Butter
  • 180g Sugar
  • 2 Eggs, well beaten
  • 1tsp of Vanilla essence
  • 250g Bakpro cake flour
  • 1 tsp Bicarbonate of soda
  • 3ml Salt
  • 3 tbsp Soured milk
  • 3 Large bananas, mashed
  1. Cream the butter and sugar.
  2. Beat the eggs in one at a time then add the vanilla essence.
  3. Sift together the flour, bicarb and salt.
  4. Add the dry ingredients alternatively with the milk and well mashed bananas.
  5. Turn the mixture into a greased loaf tin about 23cmx12cm and bake for 1 hour.
  6. A knife inserted should come out clean.
