Banana loaf
Ingredients
125g Butter
180g Sugar
2 Eggs, well beaten
1tsp of Vanilla essence
250g Bakpro cake flour
1 tsp Bicarbonate of soda
3ml Salt
3 tbsp Soured milk
3 Large bananas, mashed
Method
Cream the butter and sugar.
Beat the eggs in one at a time then add the vanilla essence.
Sift together the flour, bicarb and salt.
Add the dry ingredients alternatively with the milk and well mashed bananas.
Turn the mixture into a greased loaf tin about 23cmx12cm and bake for 1 hour.
A knife inserted should come out clean.
