- Heat the oven to 2000C
- To make the pastry, put the flour in a bowl and season with a pinch of salt. Rub in the butter with your fingers to resemble breadcrumbs, then add the egg. Cut this in with a knife, then add 2 tbsp of water. Lightly knead until it comes together, then shape and cover with clingwrap. Chill in the fridge.
- Fry the onion and carrot in the oil until soft and starting to brown. Turn the heat up slightly then add the beef. Brown the meat, then sprinkle with flour and stir to mix in.
- Add the beef stock, tomato sauce and Worcestershire sauce and season. Simmer until the gravy has thickened. Remove from the heat and let it cool slightly.
- Divide the pastry into 2 and roll out on a floured surface and cut into 12 circles. Place them in a muffin tin and push slightly down to fit the hole.
- Place another layer of pastry on top and crimp with a fork. Cut a slit in each lid and brush with beaten egg. Bake for 20-25 minutes.
