
Banana loaf
- 125g Butter
- 180g Sugar
- 2 Eggs, well beaten
- 1tsp of Vanilla essence
- 250g Bakpro cake flour
- 1 tsp Bicarbonate of soda
- 3ml Salt
- 3 tbsp Soured milk
- 3 Large bananas, mashed
- Cream the butter and sugar.
- Beat the eggs in one at a time then add the vanilla essence.
- Sift together the flour, bicarb and salt.
- Add the dry ingredients alternatively with the milk and well mashed bananas.
- Turn the mixture into a greased loaf tin about 23cmx12cm and bake for 1 hour.
- A knife inserted should come out clean.
